Protein Pancakes

Ingredients:

  • Olive oil cooking spray
  • 5 egg whites
  • 1/3 cup dry oatmeal
  • 2 tbsp flaxseed
  • 1 scoop whey/soy or vegan protein powder
  • 1 cup blueberries

Instructions:

Put egg whites, oatmeal, protein powder and flaxseed in a bowl and mix together. Spray frying pan with cooking spray and cook mixture as you do regular pancakes. In a small saucepan heat the blueberries until they become soft and saucy.  Serve pancakes with a sprinkle of cinnamon, and blueberry sauce on top.  Variation:  you can use applesauce instead of the blueberries or forego the sauce all together and use agave nectar as the syrup with your choice of fruit topping.
