Quinoa and Chickpea Salad

In a rush?  Need something quick and healthy?
Here’s a delicious vegan, gluten-free recipe full of
protein and fibre that will leave you wanting for more…

Yields approximately 4 servings

4 cups cooked Quinoa

1 can drained chick peas

1 cup sliced roasted red pepper

2 cups fresh chopped spinach

2 tbsp pure virgin olive oil

Juice of 1 lemon

Red pepper flakes

Sea salt & pepper to taste

Mix together while quinoa is still warm.  Enjoy for lunch or dinner.
