Baked Oatmeal

This recipe is a family favourite!!  I have been making this recipe for years and absolutely LOVE it.  Even my 6 year old daughter enjoys this version of oatmeal.  Probably because it tastes more like a dessert than breakfast.

Ingredients:

3 cups rolled oats
2 tsp raw sugar
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp sea salt
1/2 cup unsweetened applesauce
1 tsp pure vanilla extract
2 cups egg whites (or egg substitute)
*4 scoops Protein Powder (28g)
1/2 cup blueberries or 1 cup strawberries – diced
1 cup almond/soy milk

Instructions:

Preheat oven to 350 degrees.  Mix the dry ingredients in one bowl except fruit.  Add milk and egg whites, fold in strawberries or blueberries.  Lightly spray a 9X9 pan with nonstick cooking spray. Place mixture into pan.  Bake around 30 minutes.  I test the center with a toothpick.  When cool, cut into square pieces.  You can serve as-is or I like to cut the square up into really small pieces and put it in a bowl with unsweetened almond milk heated and sprinkled with cinnamon.  YUMMY!  I actually just finished baking a batch and can’t wait to have some for breakfast!!!

*I use natural vegan protein powder so it is safe for children.  Be sure to check the ingredients of your protein powder before allowing children and/or pregnant women to try this recipe.
