Power Protein Bars

Here is an amazing home-made recipe for vegan protein bars.  They are great for a post-workout snack!

Clean Eating Power Protein Bars

Makes:  20-24 servings
Prep Time:  20 mins
Bake Time:  30 mins

1 cup protein powder
½ cup flour (spelt, millet, quinoa, kamut – your choice)
2 cups rolled oats (not instant)
½ cup oat bran
½ cup flaxseed
½ cup wheat germ
1 tsp sea salt
1 tsp cinnamon
¼ tsp nutmeg
½ cup sucanat or agave nectar or organic honey
1 cup dark chocolate (broken into small pieces)
1 ½ cups – 2 cups soy yogurt (or yogurt cheese)
¼ cup avocado oil or healthy oil of your choice
2 tsp extra virgin olive oil
1 tsp vanilla extract
cooking spray


  1. Preheat oven to 350°.  Coat a 9×13 inch baking pan with cooking spray.
  2. In a large mixing bowl, combine protein powder, flour, rolled oats, oat bran, flaxseed, wheat germ, sea salt, cinnamon, nutmeg, sucanat and dark chocolate pieces.
  3. In another bowl, mix yogurt cheese with oils and vanilla extract.  Mix well.  Add yogurt cheese mixture to dry ingredients.  Use your clean bare hands to combine these well.  I coat my hands with olive oil.
  4. Place mixture in prepared pan.  Press it down and even out the top.  Bake on middle rack in oven for 15 minutes.  Remove from heat.  Let cool and cut dough into bars.  Place these bars on a cookie sheet lined with Silpat (I use parchment paper) and bake for another 15 minutes.  Remove from heat.  Transfer to wire cooling rack and let cool.  Place in airtight container and store in refrigerator.
