Meatless Monday Recipe – Mushroom Barley Soup

This simple and savoury soup recipe is sure to warm you up on a cold winter’s night.

4 cups vegetable stock
½ cup pearled barley
8 oz sliced mushrooms
3 carrots, sliced
2 parsnips, peeled and sliced
1 onion, chopped
2 cloves garlic, minced
1 tbsp dried dill
1 tsp sea salt
½ tsp freshly ground pepper

Bring the stock to a boil then stir in the barley and rest of the ingredients.  Cover and simmer for 45 minutes to 1 hour, until the barley is soft and all of the vegetables are tender.
