Meatless Monday Recipe – Tofu Fajitas

Cook time:  12 minutes


1 ½ tsp ground cumin
1 ½ tsp chili powder
¾ tsp ground coriander
¾ tsp sea salt
¼ tsp freshly ground pepper
12 oz extra-firm tofu, drained and patted dry with a paper towel, cut
into 8 equal slices
½ red pepper, seeded and thinly sliced
½ yellow pepper, seeded and thinly sliced
½ yellow onion, thinly sliced
4 all-natural whole wheat tortillas (7-8” in diameter)
8 tbsp clean salsa
8 tbsp soy yogurt (optional)
Fresh cilantro, to garnish


  1. In a small bowl, mix together cumin, chili powder, coriander, salt and pepper.  Heat a large nonstick skillet over medium-high heat and spray with olive oil.  Sprinkle one-third spice mixture on one side of tofu slices and add them to skillet, seasoned side down, in a single layer, working in batches if necessary.  Sprinkle other side of tofu slices with another third of spice mixture and spray with more olive oil.  Cook until brown on one side, about 3 minutes, then flip and cook until brown on the other side, another 3 minutes.  Remove and set aside.
  2. Return skillet to stove and reduce heat to medium.  Spray a little more olive oil and add peppers and onions in a single layer, working in batches, if necessary.  Sprinkle with remaining third of spice mixture and toss to coat.  Let cook without stirring until browned on underside, about 3 minutes.   Stir or toss and continue to cook for an additional 2-3 minutes until soft and browned in spots.  Remove skillet from heat.
  3. To serve, divide tortillas among four plates and top each with two slices of tofu.  Divide sautéed peppers and onions among the four tortillas.  Top each with 2 tbsp of salsa and the optional soy yogurt if you like and a few sprigs of cilantro.

    HI Lisa, I’m just incorporating Tofu into my diet. Do you have some more of your favorite Tofu recipes you can share? BTW, your blog is great! Thanks for taking the time to do this!
