Meatless Monday Recipe – Black Bean and Corn Salad

Quick and easy refreshing recipe to start off your week!

2 cups cooked black beans or 1 (15 oz) can, drained and rinsed
2 ripe tomatoes, chopped
1 red bell pepper, cut in strips
½ red onion, chopped
1 cup frozen corn kernels
1 (4 oz) can diced mild green chiles
2 tbsp chopped cilantro
2 tbsp freshly squeezed lime juice
1 tbsp extra virgin olive oil
1 tsp chili powder
½ tsp ground cumin
½ tsp dried oregano
sea salt
cayenne pepper

Put the beans, tomatoes, bell pepper, onion, corn, green chiles, cilantro, lime juice, olive oil, chili powder, cumin and oregano in a serving bowl and stir until thoroughly combined.  Season to taste with salt and cayenne.  Serve at room temperature.
