Good Friday Meatless Recipe – Quinoa Cakes

I made these yesterday for the very first time and they were absolutely delicious!!!!  My mom, daughter, son (and me) couldn’t keep their hands off them!!  The best part…they are sooo easy to make.  Less than 20 minutes between preparation and cooking time.  Perfect for a side with lunch or dinner or just as a snack all on its own.  Enjoy!!

2 cups cooked quinoa
2 large egg whites
½ tsp sea salt
1/3 cup chives
1/3 cup chopped onion 3 minced garlic cloves
½ cup ground almonds
1/3 cup wheat germ

In a medium bowl, combine all ingredients except for the ground almonds and wheat germ.  Mix in the ground almonds and wheat germ and stir gently until evenly incorporated.  Form the mixture into ice cream scoop sized patties.

Heat a bit of olive oil in a large sauté pan set over medium-high heat and swirl to coat, or do it on a griddle pan.  Add the patties to the pan so that they are not touching.  Let cook about 4 minutes or until the first side is lightly browned.  Carefully flip the patties with a spatula and let the second side cook until golden brown, about 4 minutes more.  Repeat with the remaining patties, using additional olive oil if necessary.
