Veggie Burger for your Long Weekend BBQ!!

If you are like the majority of people I know, long weekends are all about BBQs.  So why shouldn’t you have a burger like the rest of them just because you’re challenge this week happens to require you to be a vegetarian??

1 can mixed beans (use Unico Bean Medley 540 ml)
2 Tablespoons of whole wheat/spelt or rice flour
2 Tablespoons of egg replacer (we use Pane Riso)
A few shakes of hot sauce
1 tsp oregano
1 tsp parsley
1 small onion chopped
1/3 chopped green pepper
1/3 cup sliced small mushrooms
1/2 cup breadcrumbs (we use Italian bread grated)/ or a combination of wheat germ and oat bran for a healthier version.

Mash up 3/4 of the beans, add the rest of the beans and other ingredients and mix well.  You may have to add a bit more breadcrumbs but just enough to make the patties stay together.   Place on grill and cook until browned on both sides.
