Green Smoothies

Green smoothies seem to be all the craze these days, and with good reason.  They are quick, healthy and delicious and a sure way to get in your required daily intake of fruits and vegetables.  Be careful, however, not to use smoothies as a way to replace eating your regular meals.  There is something to be said about the old-fashioned way of eating which involves the process of chewing your food.  Eating vegetables in their raw, whole form is still the best way to consume your fruits and veggies but hey…there’s nothing wrong with giving juicing a try.

You will need to have a great blender to create the perfect smoothie.  VitaMix is a good one or you can use a juicer such as the Jack LaLanne juicer (my personal favourite).

Here are great greens for smoothies:

  • dandelion greens and kale (tons of calcium)
  • lettuce
  • celery
  • watercress
  • escarole
  • mustard greens
  • turnip greens
  • carrot tops
  • broccoli
  • asparagus
  • cabbage
  • brussels sprouts
  • collard greens

Then add some combo of fruits like:

  • apples
  • pears
  • bananas
  • oranges
  • papaya
  • pineapple
  • kiwi
  • blueberries
  • raspberries
  • strawberries
  • watermelon
  • cucumber

I could go on and on. There’s really nothing that can’t be added into a green smoothie, and you don’t need to follow a recipe for it to be delicious and packed with plant nutrition.


Sample Green Smoothie Recipe:

Ingredients:

2-3 fruits
1-2 watery vegetables like cucumber, celery, or squash
1 large bunch of greens

Directions:
Blend fruits first, then add watery vegetables and then greens. You can add ice if you have a great mixer, or some cold water to thin the smoothie.

Serves 2-3.

 

Healthy Green Juice Recipe

Handful of spinach
2 medium stalks of celery
small handful of parsley (long stems removed)
3 medium stalks of green kale
2 organic bartlett pears, cored and quartered
1 lemon, cut and peeled
1 cucumber, cut into small pieces

Process all the ingredients through a juicer.  Run any wet pulp back through the juicer.  Scrape off the foam and serve over ice.

Tip:  drink your juice right after you blend it.  The enzymes and nutrients in the juice will oxidize and disappear if you leave it sitting in the refrigerator.
