Meatless Monday Recipe – Brooke Burke’s Quinoa Salad Recipe

Quinoa seems to be the superfood of the moment.  It’s a great source of protein and fibre and so versatile, you can use it with almost anything!!  Here is another light quinoa salad recipe that is quick and easy.

Ingredients:
1/2 cup cooked Quinoa
3 spears celery
1/2 cup cherry tomatoes
1/2 cup black beans
1 tbsp parsley
Olive Oil
Lemon Juice
Salt & Pepper to taste

Directions:
Prepare quinoa according to package instructions and set aside to cool when finished.

Chop a handful of parsley and three spears of celery. Combine a handful of cherry tomatoes and half a cup of black beans.

Mix all ingredients together, drizzle with olive oil and add salt and pepper to taste. Add the juice of one lemon.

Serve warm or cold!
