Meatless Monday Recipe – Spicy Citrus Tempeh

Tempeh is made from cooked and slightly fermented soybeans and formed into a patty, similar to a very firm veggie burger.  It can be found in the frozen section of your natural health food store.

Although tempeh is made from soy, it has a unique taste and is mildly flavorful on it’s own, unlike tofu. If you aren’t fond of tofu, tempeh is also very high in protein and calcium, as well as beneficial isoflavones, but tastes nothing like tofu. Tempeh has a textured and nutty flavor.  I have been experimenting with tempeh lately and really am enjoying the different types of meals I have been able to create.  Here is one from the Eat Clean Diet Kitchen.  Quick, easy and delicious, just the way I like ALL my recipes!!

Ingredients:

8-10 oz block of tempeh cut into small pieces
Juice from 1 lime
juice from 1 orange
1 garlic clove (finely chopped)
1 tbsp freshly grated ginger
2 tbsp tamari
1 tbsp maple syrup  (or substitute organic honey)
½ tsp roasted sesame oil
¼ tsp chili pepper flakes
Black pepper to taste
2 tsp sesame seeds

Method:

Heat 1 tbsp coconut oil in a skillet over medium heat.

Mix together rest of the ingredients in a small bowl (except the black pepper and sesame seeds).

Add tempeh to skillet, turning tempeh over to brown all sides.  Add a few grinds of black pepper, then pour liquid mixture over the tempeh in the skillet, lower heat and let simmer until the sauce has reduced.  Garnish with sesame seeds and serve over lightly steamed vegetables such as broccoli, bok choy and carrots! This is also great with quinoa, a seed that provides complete protein.

    Very tasty! My husband (a dedicated tofu-hater) even said he liked it! Guess we will be having tempeh a lot more on Meatless Monday 🙂
