Meatless Monday Recipe – No-Bake Energy Bites

I love eating snacks that taste sinful but are still healthy.  I love them even more when I have made them myself so easily!!!  These are great little portable snacks that are easy to travel with or to just have when you’re craving something sweet.


  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 1 cup toasted coconut flakes
  • 1/2 cup chocolate chips
  • 1/2 cup natural peanut butter or nut butter of your choice
  • 1/2 cup ground flaxseed (you can substitute some wheat germ)
  • 1/3 cup honey
  • 1 tsp. vanilla


Stir all ingredients together in a medium bowl until thoroughly mixed.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls of whatever size you would like.  (Mine were about 1″ in diameter.)  Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.

    I love these little no-bake energy bites but I find them way too sweet for me. Have you tried these without honey, or less honey? Will they stay together without the honey?
