Meatless Monday Recipe – Fava Bean Dip

Summer is a time for BBQs and gatherings and a lot of finger foods.  Why not try this bean dip for something healthy and different and has a lot of protein!!

1 tbsp olive oil

2 garlic cloves (minced)

1 tbsp chopped parsley

1 can (14 oz) fava beans (drained)

1 tbsp freshly squeezed lemon juice

1 tsp dried spearmint

½ tsp sea salt

Freshly ground black pepper

Heat the oil in a small skillet over medium low heat.  Add the garlic and parsley and sauté for 1 minute.  Stir in the beans, lemon juice, spearmint, and salt.  Season to taste with pepper and cook until heated through, stirring and mashing the beans a bit as they cook.  Serve warm or at room temperature.

    This sounds good. Fava beans remind me of silence of the lambs. 😛
