Meatless Monday Recipe – Red Lentil Turkish Soup

Summer’s not yet over but it’s never too early to start thinking of some yummy warm soup recipes :).  Here’s a healthy lentil soup recipe that’s easy to make and even easier to eat!

Ingredients:

  • 2/3 cup red lentils
  • 2 carrots chopped
  • 1 medium size onion (chopped)
  • 1 small onion (chopped)
  • 1 small potato (chopped) (optional)
  • 1 tsp cumin
  • 1 tsp tomato paste
  • Salt & pepper to taste
  • 5 cups water
  • Olive oil

Method:

In a pot, throw the lentils, carrots, medium size onion, potato (optional), cumin, salt, pepper and 5 cups water.  Let them cook slowly about 40 min.  Remove from heat and blend with a kitchen blender until smooth.

In a non-stick pan, add 1 tsp olive oil and finely chopped small onion.  Add tomato paste and fry until onions get soft.  Mix with soup. Readyyy!!!!
