Meatless Monday Recipe – Carrot Raisin Bars

Ingredients:

Dry:
1/2 cup vanilla (or unflavored) protein powder
¼ cup + 2tbs ground flax
1/3 cup stevia
1 tsp baking powder
2 tsp cinnamon
½ tsp nutmeg
½ tsp ground cloves
½ tsp ginger

Wet:
½ cup pureed carrots (you can use baby food)
3 tbs coconut milk
2 large eggs
1 tsp vanilla extract
¼ cup raisins

Method:

1) Preheat your oven to 350 degrees.
2) Spray a 5×7 pan with non stick spray.
3) In a bowl combine your dry ingredients: protein powder, flax, stevia, baking powder, cinnamon, nutmeg, cloves and ginger.
4) Mix in your wet ingredients: pureed carrots, coconut milk, eggs and vanilla.
5) Mix well.
6) Fold in your raisins.
7) Pour the batter evenly into your baking pan.
8) Bake for approximately 25 minutes.

Yield: 6
Preparation Time: 10 minutes
Cooking Time: ~22 – 25 minutes

    this sounds yummy. what are your thoughts about substituting honey or pure maple for the stevia?

      Both of those are good options. I have personally never even used stevia so just use what works for you 😉
