NO Bake Honey Peanut Butter Balls: Gluten and Dairy Free!!!

I know a lot of you roll your eyes when I talk about delicious tasting desserts that are gluten and/or dairy free.  But remember when your mom used to tell you “you don’t know if you like it unless you try it?”  Well it’s TRUE!!!  Get it out of your head that if something is good for you then it must taste bad because that is soooo not true!  If you don’t believe me, try it for yourself!

Ingredients:1/2 cup honey
1/2 cup natural peanut butter
2 cups brown rice crispy cereal
1/2 cup salted peanuts, crushed
4 oz unsweetened 100% cacao baking chocolate
1/4 cup coconut oil
2 tbsp powdered stevia

Honey Peanut Butter Balls

In a bowl mix together honey, peanut butter and crushed cereal.  Once incorporated well, roll in crushed peanuts to coat.  Place balls on a baking sheet lined with parchment or waxed paper.  Refrigerate balls for 30 minutes.  Melt chocolate, coconut oil and stevia in a bowl in the microwave for 1 minute.  Stir until smooth.  Refrigerate to thicken slightly, (about 15-20 mins).  Dip one ball at a time into chocolate sauce, place on baking sheet.  Continue with rest.  Refrigerate balls for 10-15 minutes until chocolate until hardened.  Drizzle with more chocolate sauce on top and chopped peanuts.  Keep refrigerated.  Makes 18.

YUMMMYYYYYY…these are sooooo GOOD!!!!!!
