Meatless Monday Recipe – Artichoke Soup

It seems as if winter has truly arrived now and when it’s cold outside there is nothing better than a warm bowl of delicious and healthy soup.  It’s even better when the recipe is as easy as this one!!


2 tbsp Extra Virgin Olive Oil
1 large yellow onion, chopped
3 garlic cloves, peeled and coarsely chopped
1 1/2 pounds Jerusalem artichokes, peeled and cut into 1-inch dice
5 cups vegetable stock (low sodium or preferably home-made)
1/2 tsp sea salt
1 or 2 grinds of black pepper


In a large saucepan, heat the olive oil over medium-high heat.  Add the onion and saute until soft and translucent, about 5  minutes.  Add the garlic and saute for 30 seconds.  Add the Jerusalem artichokes, stock, salt, and pepper and bring to boil.  Lower the heat, cover, and simmer until the vegetables are tender, 10 – 15 minutes.

In a blender, blend the soup in small batches until smooth.  Return the puree to the pan and stir well.  Taste and add more salt and pepper if you like.
