Meatless Monday Recipe – Lentil Stew

I made this dish last week and even my picky old-fashioned, Italian style-only eating Dad enjoyed it 🙂  Give it a try.  This is a complete meal since it contains loads of complex carbohydrates as well as muscle-building protein.

Prep Time:  10 mins
Cook Time:  1 hour

Lentil Stew


1 cup green lentils
1 large onion, diced
4 garlic cloves, passed through garlic press
1 tbsp avocado or extra virgin olive oil
2 large carrots, coarsely chopped
2 ribs celery, diced
2 medium sweet potatoes, sliced
4 bay leaves
1/2 cup wheat berries or wild rice (do NOT use instant rice)
1/2 tsp dried thyme
1 – 1 1/2 cups low sodium vegetable broth (or homemade)
sea salt & pepper to taste if required (I don’t find it needs any)


1.  Prepare lentils according to package instructions.  Lentils should be chewy, not soft.

2.  In a large skillet, saute onion and garlic together for about 2 minutes in oil.  Add remaining vegetables and bay leaves and continue to cook for 5 more minutes.  Add wild rice or wheat berries and continue to cook for 35 minutes stirring occasionally.  If stew is too thick, dilute with water or stock.

3.  Add cooked lentils.  Cover and simmer another 15 minutes.  Season with salt and pepper if desired and thyme.  Remove from heat and serve.
