Meatless Monday Recipe – Kale Salad

For someone like me who eats salad on a daily basis, you need to become creative or else your meals can get to be a bit boring.  Here’s an Asian inspired salad that is my current favourite and, thank goodness, has become a favourite for both of my kids and many of my family members!!

A good tip to know about eating raw kale is to place a drop of olive oil between your palms and massage the kale leaves between your palms after washing them.  You will notice how much greener they get and it takes away the bitterness.

Instructions:

The ingredient amounts below are based on a 2-person salad.  Obviously the amounts will vary depending on whether you are making a salad just for yourself or feeding a family of  6 or more!!!  Use your judgement.

2-3 cups of Kale – cut to bite size pieces
1 cucumber
1/2 cup black beans
1/2 avocado
2 tbsp ground flaxseed
2 tbsp fresh cilantro
2 tbsp unsalted sunflower seeds
pinch of sesame seeds

Dressing:

2 tbsp sesame oil
1/4 cup rice vinegar (more or less depending on how you like it)
1 tbsp tamari (gluten-free soy sauce)

Mix well together and pour over salad and serve!!

There’s a great balance of fibre and protein in this salad and will keep you feeling full long after you’re done.
