Meatless Monday Recipe – Lentil Hummus

6 May

I absolutely LOVE LOVE LOVE hummus!!  I could eat it every day.  But this is a version of hummus that is different than your original chick pea spread and just as healthy and delicious.  Did I mention how easy it is to make too??

  • 3/4 cup (175 mL) dried green lentils
  • 2 cloves garlic
  • 2 tbsp (30 mL) lemon juice
  • 1 tbsp (15 mL) tahini (sesame seed paste)
  • 1 tbsp (15 mL) extra-virgin olive oil
  • 1 pinch each salt and pepper
  • 1 pinch cayenne pepper

In large saucepan of boiling water, cook lentils until tender, about 25 minutes. Drain.

In food processor, puree together lentils, garlic, lemon juice, tahini, oil, salt, pepper and cayenne pepper until smooth.

Voila!  Enjoy 😉

Until next time,

Have a fit and fabulous day!
