Meatless Monday Recipe – Cauliflower Sweet Potato Pancakes

I know the recipe calls them pancakes but I don’t think I would personally make these for breakfast (just sayin’).  That choice is completely yours.  Regardless of when you make it, you and your kids should really give this recipe a shot – just don’t tell them what is in it cause then they may not want to try it!!

Ingredients:

  • 1 (1 ½ pound) head cauliflowercauliflower sweet potato pancakes
  • ¼ cup finely diced onion
  • 2 eggs, lightly beaten
  • ¾ cup spelt or whole wheat flour
  • 1 sweet potato, grated
  • 2 tablespoons chopped parsley
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • corn or grapeseed oil, for preparing the skillets
  • Optional:  applesauce, for garnish

Instructions:

Chop the cauliflower into florets, transfer to a bowl and add about 3 tablespoons of water. Microwave the cauliflower on high for 4-5 minutes, or until tender when pierced with a fork. Let cool for 1-2 minutes and transfer to a larger mixing bowl.

Add the diced onion, beaten eggs, flour, grated sweet potato and chopped parsley. Mash well using a potato masher or large fork. Season with the salt and pepper, taking care to ensure all ingredients are evenly distributed.

Place about ¼- ½ inch of oil into a skillet over medium-high heat. Place heaping tablespoons of the cauliflower sweet potato mixture into the skillet, with a few inches of space in between the mounds of batter. Flatten each mound of batter using the back of a spatula. Cook 3-5 minutes, or until the bottom of each pancake is browned, flip and cook 3 minutes more, or until cooked through. Repeat until you are out of batter. Option to dot the pancakes with apple sauce to taste and enjoy!
