Meatless Monday Recipe – Sweet Potato Black Bean Burgers

Okay so I know the kids are back to school tomorrow but summer isn’t officially over for another 3 weeks so don’t put away that BBQ just yet.  Here is another meatless burger recipe that I’m sure you’ll love.  Even though this recipe uses the oven the BBQ is always my first choice when making burgers.


1 1/2 cups black beans, drained and rinsed
6 tbsp fine bread crumbs
3/4 cup sweet potato, baked and mashed
3 tbsp cilantro, chopped
1/3 cup white onion, chopped
1 tsp garlic powder
3/4 tsp salt
1 tsp black pepper
2 tbsp olive oil
1 tbsp cider vinegar
2 tbsp lime juice

To complete the Sweet Potato Black Bean Burger:

Whole-wheat burger buns
1/4 lime
1 avocado, diced
1 onion, sliced
1 tomato, sliced


Preheat oven to 375 degrees.  Prepare a baking sheet with a light layer of olive oil (I usually put in a tbsp and then spread with a paper towel).

Place the black beans, bread crumbs, mashed sweet potatoes, cilantro and onion together in a food processor or large bowl.  Season the bean mixture with garlic powder, salt, pepper, olive oil, vinegar, and lime juice.

If using a food processor, pulse the bean mixture together until all ingredients are well combined and evenly distributed.  If using a bowl, mash the bean mixture together with a potato masher until well combined.

Shape the black bean mixture in to 5 patties of equal sizes with your hands.  Roll the unbaked black bean burger patties in additional bread crumbs if you like your burger crispy.

Place the burger patties in the oven and bake for 25 minutes (or on the grill).  Add the whole wheat buns to the oven .

Squeeze lime over the avocado and add a slice to each burger.  Top with a tomato and onion and any other condiments you like!
