Meatless Monday Recipe – Quinoa Salad with Edamame and Red Pepper

If you haven’t seen enough quinoa recipes from me already, here’s another one!!!

INGREDIENTS:

  • 1/4 cup quinoa
  • 1/4 cup chopped red pepper
  • 1/4 cup shelled edamame
  • 1/8 diced onion
  • 1/8 cup dried tart cherries

White wine vinaigrette dressing

  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons sunflower seeds, shelled

PREPARATION

  1. For quinoa salad

Cook quinoa, cool and toss with red pepper, edamame, onion, and dried tart cherries.

  1. For white wine vinaigrette dressing

Whisk together olive oil, white wine vinegar, & Dijon mustard. Add salt and pepper. Mix 2 tbsp dressing (or more to taste) into salad and sprinkle with 2 tbsp shelled sunflower seeds.
