Meatless Monday Recipe – Quinoa & Kale Salad

Here’s a great salad recipe which contains your protein, veggies and good fat and takes 5 minutes to make (not including the cooking time for the quinoa which can always be prepared in advance).  It truly doesn’t get any easier people!!!
Serves 4

1 bunch kale, washed and de-stemmed
1 cup cooked quinoa
2 avocados, diced
Juice of 2 lemons
2 tablespoons olive oil
Salt, to taste

1. Chiffonade the kale by stacking the leaves, rolling them tightly, and then slicing them perpendicularly to the roll to create long, thin strips.  I usuallly massage the kale between my palms with olive oil as it tends to make the kale taste a less bitter.

2. Mix everything together and enjoy!
