Meatless Monday Recipe – Chia Seed Protein Pudding

I have tried various versions of this seed pudding and then came across this one last week on the Daily HIIT website and thought it sounded pretty easy and delicious so figured I would share it with you.  This is a great refuelling snack pre and/or post workout.

Chia seeds expand when placed in water/milk and creates a thick, almost gooey consistency (they are often used as egg substitute for vegan baking).  Placing it in the fridge gives it time to expand and create a more pudding-like texture so let it sit and be patient 😉 .

Ingredients:

  • 2 tbsps chia seeds
  • 1 scoop protein powder (why? Because its fast break down protein)
  • 1 cup unsweetened almond milk
  • ¼ cup berries (can use other fruits like banana and even dark chocolate chips)
  • 1 tbsp flax seed

Directions:

  • mix all the ingredients together
  • leave in the fridge (the longer the better)

OR…try these variations:

Tropical Chia Pudding

  • Coconut milk
  • banana
  • pinapple

Blend, put in jar, add chia seeds and place in fridge

Or for those of you with a sweet tooth…why not try this version:

  • 3 tbsps chia seeds
  • 1/2 tsp vanilla
  • 1 tbsp real maple syrup (not your Aunt Jemima mix!!)
  • 1 cup unsweetened almond milk

This can be eaten warm or cold…your choice!!
