Meatless Monday Recipe – Arugula Fig Almond Salad

I am always looking for new salad recipes cause let’s face it…I eat a lot of salad.  And like they say, you CAN have too much of a good thing.  That is why I like to try different types of salad.  Whether it’s changing up the greens – from spinach, to kale, or like this recipe, arugula – or changing up the vegetables or fruits that go in the salad, there are definitely countless ways to enjoy a really good and filling salad either as a lunch time or dinner meal or to eat it on the side with another main dish.  Here’s a tasty recipe you can try which can be used more as an appetizer or side dish with your main meal.  The salad in this picture has cheese and you can definitely add feta or goat’s cheese to this recipe if you like.  For me and my fellow non-dairy eaters, I am going to omit the cheese from this recipe.

Serves 4

  • 2 tablespoons balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • salt and pepper, to taste
  • 1 pint figs, quartered
  • 4 cups arugula
  • 1/2 cup natural almonds


Place the balsamic vinegar in a small bowl, Whisk in the olive oil. Season with salt and pepper to taste.

Layer 1/4 of the arugula and figs onto a small plate. Top with 1/4 of the almonds.  Drizzle with the balsamic vinaigrette. Repeat with the remaining ingredients on 3 other plates and enjoy!
