Meatless Monday Recipe – Middle Eastern Inspired Lentil Soup

I have made different versions of lentil soup (my son LOVES lentils!!) but I haven’t tried putting all these different types of lentils in one soup…and the idea of putting all of this in my crock pot and letting it cook all day without me having to do anything is just too exciting for words!!!

Ingredients:

  • 2½ cups red, green & yellow lentils (soaked for at least 3 hours, then rinsed. I soak mine overnight)
  • 3 cloves garlic (minced)Middle-Eastern-Lentil Soup
  • 1 small yellow onion (diced)
  • 1 tbsp ground cumin
  • 4 cups sodium free vegetable stock
  • 2½ cups water
  • 6oz new potatoes (pureed) – Optional
  • 1 tomato
  • Juice of 1 lemon
  • ¼ cup fresh coriander (chopped)
  • 1 tsp toasted sesame seeds
  • 1 tsp sea salt

Directions:

1. Add all ingredients (EXCEPT coriander & sesame seeds), into a slow cooker, cover and cook on med-low for 8-10 hours OR on stove top for 45-60 minutes on low-heat. Stir to be sure all ingredients are well combined.

2. Remove from heat.  Top with a sprinkle of cumin, coriander & sesame seeds and serve with a side of hummus and veggies OR crackers.
