Meatless Monday Recipe – Vegan Gluten-Free Pasta and Veggie Stir Fry

I’m Italian.  I love pasta.  I can’t help it.  I don’t eat it very often but if I could, I probably would.  Anyway you can cook it, I would probably enjoy it.  Unfortunately, since many pasta dishes in restaurants include either meat or dairy, or both, I rarely, if ever, eat pasta if I am not the one cooking it.  When I am cooking at home, it’s a completely different story!  I can experiment with spelt, rice, corn, kamut or ezekiel pasta grains and mix it with an endless array of veggies, sauces and spices.  Here is an interesting recipe that is quick and full of great tasting ingredients.  It even has a bit of protein which makes it a complete meal in-one!

Serves 4

GlutenFreeVeganPasta

Ingredients:

  • 3 tablespoons extra-virgin olive oil
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 medium-sized sweet potatoes, cut into 1-inch cubes
  • 2 carrots, chopped
  • 1 Tbsp. gluten-free tamari
  • 1 cup shelled frozen edamame (optional, but I like the added protein)
  • 4 cups spinach
  • 3 Tbsp. nutritional yeast (a good substitute for parmesan cheese)
  • 3 cups dry pasta (the picture above shows gluten-free fusilli)

Directions:

Prepare pasta according to instructions on package.

In a large pan, heat 1 tablespoon of olive oil at medium heat. Add onion and garlic and sauté (stirring occasionally) until lightly browned.

Add sweet potato, carrots, edamame and tamari. Add 2-3 tablespoons of water to the pan. Cover and let water boil, stirring every few minutes. Keep an eye on the pan and add more water as it evaporates. There should be a light layer of water to help cook the vegetables.

After 15 minutes, check to see if the sweet potatoes are tender. They may need another 5-7 minutes to cook. When they feel thoroughly cooked, mix spinach in and cover for 2 minutes. Uncover and allow any remaining water to evaporate. Stir in pasta, nutritional yeast and the remaining two tablespoons of olive oil. Season with salt and pepper and enjoy right away!
