Meatless Monday Recipe – Chocolate Banana Smoothie

I have been struggling with breakfast ideas for my kids lately.  They aren’t into pancakes and waffles or even toast bread for that matter (they have whole wheat and gluten free options available) and bagels are not an option in our house (too much sugar).  They don’t want to eat eggs more than once a week (if I’m lucky) and for some reason, they have come to believe that milk and cereal is only something to be eaten before bed.  So other than fruit, there really aren’t any other foods that they like or want to eat before heading out for school every morning.  I have tried exciting them about oatmeal in every different possible way I can imagine but it’s not working.  One thing they do enjoy,  however, are juices and smoothies so you know what?  Why not?  I can mix in a bunch of really healthy ingredients and send them off to school knowing they’ve had a hearty, balanced breakfast to start their day.  I’ve been doing a lot of research lately on different recipes available for both smoothies and juices and here’s one that I found that I am sure will be a hit with BOTH kids.  So guess what they’re having for breakfast this week?  🙂

Chocolate-Banana-Smoothie_web

  • 1 banana
  • 1 banana, frozen
  • 1 1/2-2 cups unsweetened almond milk
  • 1 teaspoon almond butter
  • 1 tablespoons raw cacao powder
  • 1 tablespoon chia seeds
  • 1 teaspoon honey
  • 2 drops vanilla extract

Add all ingredients to your blender and puree until smooth or until its reached your desire consistency!
