Meatless Monday Recipe – Garlic White Bean Dip

I am always looking for ways to create healthier party appetizers.  There’s only so much hummus and guacamole one can eat (and don’t kid yourself…I can eat a lot of BOTH!!).  Here’s a protein filled bean dip that is sure to have people asking where you bought it at your next dinner party ;).  It’s quick and easy and that’s always a great thing when you’re entertaining.


2 cups cooked cannellini beans from scratch (or 1 can drained and rinsed)
2-3 garlic cloves
2-3 sprigs fresh rosemary, chopped (or 1 tsp dried)
1/2 lemon, juiced & zested
1 tbsp olive oil
pinch of sea salt
Cayenne pepper to taste


Put everything but the olive oil  in the food processor.
Run the processor until the mixture is smooth, adding the olive oil as the mixture is blending.  You may want to add more oil, lemon juice or even water if the mixture is too thick.
Can be refrigerated in an airtight container for up to 1 week.
