Easter Monday Meatless Recipe – no cooking or baking required

If you’re like me, then you’re home today with your kids celebrating the Easter Monday holiday.  Soooo…I thought I would share a recipe with you today that you can make with the kids and that perhaps they will actually love (unlike mine who apparently think peanut butter is gross…REALLY?!?!?  And they’re mine?  I would  be happy in a world filled with peanut butter jars and a spoon).   Sorry, I digress.  The good thing about this holiday is that a lot of places are open so take a trip to your local Bulk Barn (what kid doesn’t love that place??) and pick up any of these ingredients you don’t already have – and I’m guessing you don’t have puffed quinoa just lying around in your pantry (I know I didn’t)!
  • 1 cup puffed quinoa
  • ½ cup peanut butter
  • 3-4 tbsp agave nectar (I use real maple syrup as it is more natural)
  • 1 tbsp crushed peanuts (optional, for extra crunch if using smooth PB)
  • 1 tsp vanilla extract
  • vegan dark chocolate (optional)

  1. In a mixing bowl, combine the peanut butter, agave and vanilla. If the mixture is too firm, heat it up on the stove a little bit.
  2. Add the puffed quinoa (and peanuts, if using), and stir to combine.
  3. Place mixture in the fridge for 15 minutes to let it firm up.
  4. Remove from fridge, roll into 12 balls, and return to fridge for 15 minutes before serving.
  5. Optional: dip some or all of the balls in dark chocolate.

Yes..that’s it!  Honestly 🙂
