Happy Long Weekend

I don’t know about you but I can’t believe it’s already Victoria Day weekend!  Really?  I mean where did April even go?  I think Mother Nature has confused things a bit or is just working in slow motion this year cause all this rain we’re getting should have happened last month.  But heck, if that means summer is just going to start later – and end later – I am totally good with that!!

For many of us, regardless of the weather – rain or shine – we will be pulling out that BBQ (if you haven’t already) and enjoying some fun quality time with friends and family.  I know I am!

For those of you wanting to try a vegetarian version of your own burger, try this recipe below.  It’s one of my personal favourites!!  Pair it with a nice salad, grilled veggies and a really good bottle of wine and you have a healthy, delicious meal!

Quinoa Burgers

2 cups of cooked quinoa
1/4 cup of finely minced sweet bell pepper
1/4 cup of finely minced onion
1 tsp of cumin powder
1/4 tsp sea salt
1/8 tsp of ground pepper
1 tbsp of dried parsley
1 whole egg +2 egg whites beaten (or substitute 2 tbsp chia seeds mixed with 6 tbsp water for a vegan version)

Preheat oven to 375 degrees. Line a baking tray with parchment paper.
In a large mixing bowl mix quinoa, pepper, onion, spices, salt, and
pepper. Then mix in beaten eggs. Shape quinoa mixture into thin
patties about 1/4″ thick and place onto parchment paper lined baking
sheet. This is key. If the patties are too thick they will not cook
through and be mushy. Bake for 30 minutes until crisp and browned.
