Meatless Monday Recipe – Grilled Vegetable Flatbread Pizza

If you’re like me then just hearing the word “pizza” makes your mouth water.  I gave up cheese a loooong time ago but the one thing I have not and WILL NOT give up is pizza.  It’s probably one of my favourite foods in the whole world.  Good thing is that there are so many different ways of having your pizza without it wreaking havoc on your body.  For this last long weekend of the summer, I thought I would share this BBQ version of a vegetarian pizza that is sure to satisfy.

  • Any combination of fresh vegetables (peppers, onions, eggplant, zucchini, summer squash, mushrooms, etc) cut into slices
  • olive oil
  • salt and pepper
  • Leafy green vegetables (spinach, arugula or other greens), cut into thin slices
  • chopped tomatoes or pesto
  • 1-2 slices naan bread
  • shredded Daiya Mozarella cheese (or regular mozarella)


Heat grill to high heat.

Toss sliced vegetables, except for leafy greens, in olive oil and season with salt and pepper.

Grill vegetables until lightly charred on both sides.

Brush both sides of naan bread with oil, and sprinkle lightly with salt.

Grill both sides of bread until lightly toasted.

Reduce grill heat to low.

Spread tomatoes or pesto over bread, and top with grilled vegetables, greens and cheese.

Place pizza back on grill and heat for an additional 2-3 minutes, to warm vegetables and melt any cheese.

Meatless Monday Recipe – Almond Chocolate Freezer Fudge

Giving up dairy does not mean having to give up chocolate.  I mean seriously – I am human and female – giving up chocolate for life would have just been an unattainable goal to set for myself and you know I’m all about creating attainable and sustainable goals ;).  So I say thank God for companies like Enjoy Life Foods that make dairy-free, sugar-free chocolate that I can use in my recipes guilt-free and still  have them tasting delicious!

I came across this recipe on Facebook from one of the pages I follow.  Food Babe is an amazing source of information when it comes to the foods we eat here in North America.  She’s a whistle-blower on the food industry making us aware of all the hidden secrets these big corporations try to keep us from.  She does all the research so you don’t have to!!  Follow her page on Facebook.

In the meantime, why not try this delicious and easy recipe that is sure to cure your sweet tooth.  A one inch square of this fudge has just the right amount of sweetness, fat and protein to seriously satisfy your sweet tooth unlike a piece of traditional fudge, cake, or something overly refined that could cause you to overindulge in more than your share.

Almond Chocolate Freezer Fudge

Serves: 20
  • 1 cup almond butter
  • 4 tablespoons of coconut oil
  • 1 and ½ tablespoons of maple syrup
  • 4 ounces dark chocolate
  • ½ tsp sea salt
  1. Cream almond butter, coconut oil, maple syrup, and salt together in a bowl
  2. Pour mixture into a parchment paper lined small baking dish (8×6)
  3. Top with chopped chocolate and freeze for at least 2 hours
  4. Remove from freezer, carefully remove fudge by lifting ends of parchment paper
  5. Cut into 1 inch squares and store in freezer separated by parchment paper
Please note that each bar contains 138 calories so eat accordingly!
